East Melbourne based wedding cake designer, Bryan of dux cake co had just finished his Patisserie course in 2016 + was searching for a job relating to his field with a year has going by in a flash with no success. Rolls around October 2017, "I just got a new oven fitted at my house, the previous old oven never worked so I didn’t bake at all and at the same wasn’t really a big fan of baking, so I took this chance and started to bake cakes. Slowly I grew to love baking and decorating it." Bryan shares.

Around November 2017 dux cake co was born with the help of Bryan's cousin Alvin. The word “Dux” came about from my high school, it’s an award only given to the best achieving students.

is there a story you would like to share from your experiences?
A complete random story, before dux cake co was born, I was tasked to make my friends birthday cake. I was a complete beginner when it comes to making a sponge/buttermilk cake, I was more of a gateaux cake type of a person. I baked a chocolate and a matcha cake but the matcha was failure due to a miscalculation of the recipes and was very under baked.

I also didn’t have the right equipment to make the buttercream and meringue . No kitchen aid. All I had in the kitchen was a baby whisk, not even a proper whisk. Attempting to make stiff peak meringue with a baby whisk definitely was a complete nightmare. Never again attempting that. Needless to say that meringue at best was a soft peak which later became a meringue lava looking cake. Win-win?

advice:
Pick someone who can create the vision of the perfect wedding cake you envision for and also the most important would be the flavour of choice in my opinion, don’t be shy ask what exotic flavour the cake designer offer, don’t just settle on vanilla flavour (now there’s nothing wrong with it) but definitely explore other option besides Vanilla or Chocolate. It will make your special day more memorable.

where do you find your inspiration?
I find my inspiration mostly from Instagram, nowadays the trend on cakes keeps evolving non stop especially for Buttercream style cake, the sudden increase of sharp edges to texture cake and now the upsurge of the new technique such as marble buttercream and fault line cake.

2020 predictions:
I believe especially for buttercream style cake, it will be texture, like incorporating 3D printing design.  Some other thought would be a portrait/abstract drawing on cakes. Or moving parts on the cake with technology.  Another thought would be chocolate showpiece, that’s something I would like to see incorporated with wedding cakes. Or even ice sculpture.
